Ingredients

  • 24 pecans4 on each one
  • 6 datespitted
  • 12 teaspoons peanut butterany nut or seed butter works
  • 100 grams dark chocolatedark or any you like
  • pinch sea saltfor the top is optional

 

Instructions 

Remove the pit from one date, then flatten it out on a baking sheet covered with parchment paper.
Put one pecan on each corner and add a spoonful of any nut or seed butter.
Repeat for each one, topping with an additional teaspoon of nut or seed butter.
Freeze for fifteen to twenty minutes, or until the nut butter and dates are set.
Melt the chocolate in a microwave or over a double boiler just before removing them from the freezer. I like to use a double boiler to melt my after cutting it into chunks.
Remove the dates from the pan and dip each one into the melted chocolate before returning them to the parchment paper-lined baking sheet. Once more, freeze for five to ten minutes. Then, remove and dust with sea salt.

NOTE

For presentation, you can drizzle some chocolate over them before you sprinkle them with sea salt.

This will create the chocolate design you see in my post. Freeze them a third time for a mere five minutes.

These candies keep for weeks in the refrigerator! Have fun.

I DON’T LIKE DATES, IS THERE AN ALTERNATIVE?

Yes, you can place four or five pecans in the shape of a circle on a baking pan covered with parchment paper if you don’t like dates. To tie them together, I would now pour the molten caramel in the center and freeze. You can enjoy dipping into extra melted chocolate once it’s frozen!

 

CAN I USE MILK CHOCOLATE INSTEAD?

Without a doubt, milk chocolate can be substituted for dark chocolate.

 

HOW DO I STORE THESE TURTLE CHOCOLATES?

The turtles will last for a few weeks if kept refrigerated!

 

CAN I ADD CARAMEL INSTEAD?

Alternatively, you could use caramel from the shop or even melt caramel candies and use those in place.
